Chocolate Chip Cookies

A good chocolate chip cookie is a must have for any family but finding a great recipe can be tough, even more so for us eating a plantbased diet as we can’t just run to the supermarket and buy any packet of cookies.

I’ve tried so many chocolate chip cookie recipes over the last few years, some were too hard, some too time consuming to make, some had strange ingredients that I found hard to source, but then I found this one, this is by far the best and easiest chocolate chip cookie recipe I’ve come across.

They’re simple and quick with ingredients that I always have in my pantry. Best of all the whole family love them and they get excited about them every time I make them. When the girls walk in the door from school they can smell straight away if I’ve been baking these, which to be honest is at least once a week, sometimes more!

You need:

1 cup wholemeal plain flour
1 tsp baking powder
1⁄2 tsp baking soda
1⁄4 cup coconut sugar or other unrefined sugar
1⁄4 tsp sea salt
1⁄3 cup pure maple syrup
1⁄4 tsp blackstrap molasses
1 tsp pure vanilla extract
1⁄4 cup melted coconut oil
1⁄3 cup non-dairy chocolate chips

Preheat oven to 175 degrees C.

Add the first 5 ingredients to a medium sized bowl – flour, baking powder, baking soda, sugar and salt, and give them a little stir together.

In a separate smaller bowl, whisk together the maple syrup, molasses and vanilla, then whisk in the oil until they’re all well combined.

Add the wet mixture to the dry, along with the chocolate chips, and stir through until everything is well combined (do not overmix).

Place spoonfuls (I usually use a heaped tablespoon per cookie) of the batter on a baking tray lined with baking paper, shape into a circle with your hands and flatten a little.

Bake for 12 minutes, until just golden (if you bake for much longer, they will dry out and be crispy).

Let them cool on the tray then transfer to a cooling rack. Makes approximately 12 cookies.
